Mother's Day 2011



Better late than never.  I finally got my Mother's Day cookies made and took them to my Mother(s).  My mom is my constant supporter and biggest fan and my 'godmother', Auriel, runs a close second.  I decided to go with a family favorite... Buttery Oat Tea Cookies.  These buttery, chewy, crispy cookies are something that my mom started making a few years ago to add to her growing bake list during the holidays.  Part of my gift this year was including a little tag that reads "Free Cookies for One Year".  When the jar is empty, they'll bring it back and I'll fill it with something else.  (Really it's a great way to rid my house of all these sweets I'm making....)  And who doesn't like home delivery for fresh baked cookies??  I've included the recipe below.


Buttery Oat Tea Cookies

Ingredients:

2 sticks butter, softened
1 1/2 c granulated sugar
1 large egg, room temperature
1/2 tsp vanilla extract
1 1/2 c self rising flour
1 c uncooked oats

Method:

Preheat oven to 350 degrees.  Beat butter and sugar at medium speed until slightly fluffy.  Add egg and vanilla; mix until thoroughly blended.  Stir in flour.  Chill dough for 10 minutes.  Shape into 1" balls and roll in oats.  Place 2 inches apart on a sheet pan lined with parchment paper.  Bake at 350 degrees for 12-15 minutes or until edges are golden brown.  Remove to wire racks to cool completely.

  2. @LittleBird, So sorry for the delay! I purchased these jars in Target. In the housewares section with kitchen items. I was just there recently and saw that they still have them in stock - super cheap, too!
